HCC introduces beef carcase selection training

Beef producers in Wales can be the best at selecting an animal for slaughter - if they attend a free course arranged by Hybu Cig Cymru – Meat Promotion Wales (HCC).

Lamb carcase selection training has been available to Welsh farmers for a number of years. Due to its success and industry demand, beef producers are now being offered the same experience.

The practical, hands-on sessions are suitable for new and experienced beef producers and are held at St Merryn, Merthyr Tydfil.

They will assess the live animals in the lairage prior to slaughter, followed by a viewing of their carcasses with experienced trainers who will talk through their pros and cons from a processor and consumer perspective.

“Farmers will often select their animals based on personal preference and experience,” said Luned Evans, Industry Development Officer at HCC. “These sessions, however, will help them understand how to meet the requirements and expectations of processors.

“They will also emphasise the importance of handling the animal rather than selecting on weight alone, identifying the key areas for recognising a suitable condition for slaughter.”

Other topics covered during the session include animal health and welfare, presenting the animal for slaughter, carcase dressing specification and best practice.

Miss Evans added: “The producers themselves are seldom offered a chance to step inside the abattoir to see how the production line works and meet site managers. We would encourage farmers to make the most of this opportunity.”
