Welsh Lamb “Divine” Says Top Chef “Lambassador”
The youngest ever winner of a prestigious European female chefs competition will be Welsh Lamb’s “Lambassador” in Belgium for the next twelve months.
Anne-Sophie Breysem, 28, the Head Chef at De Kwizien restaurant in Hasselt, north-east Belgium, won the title at a celebratory lunch at Chaudfontaine, and was quick to sing the praises of Welsh Lamb to the attendant media.“This meat is so deliciously tender, it’s really divine,” she said.
The competition - “Lady Chef of the Year” - is open to candidates who are the head chef of a professional kitchen. Voting is by the public and a professional jury of culinary journalists, accounting for 50 per cent of the votes each.
“At the age of 28, she is the youngest Lady Chef ever,” said Hybu Cig Cymru (HCC) - Meat Promotion Wales’ Export Market Development Executive, Deanna Leven. “Her year as Welsh Lamb’s ambassador in Belgium will run from September 2015 until August 2016 and we will be using Anne-Sophie’s knowledge and enthusiasm for cooking Welsh Lamb to spread the word in Belgium.”
PGI Welsh Lamb was one of seven sponsors of the competition, which was attended by a number of leading journalists, food writers and critics.
Anne-Sophie Breysem’s winning creations included a Welsh Lamb dish (available to view and download at http://www.ladychef.be/fr/recipes/recipe/recept-lamskroon-uit-wales).This, and other dishes are a regular on her menu at De Kwizien and she is fully convinced of the market leading qualities of premium PGI Welsh Lamb.
Ms Breysem said: “The great thing about Welsh Lamb meat is that everyone can use it for any occasion really. It is ideal for a feast dinner, but you can also use it in everyday dishes, also using less traditional cuts.
“Personally I enjoy working with the lamb crown and sweetbreads, a passion that I inherited from my family. It is therefore with great pleasure that for the next full year, I will be an ambassador for Welsh Lamb and put the product on the menu of De Kwizien, with alternating cuts.”Back to news listing
