Lamb Eating Quality Project
The excellent production values of Welsh livestock farmers have helped make the taste of premium PGI Welsh Lamb a global sector leader. Discerning diners from Canada to Hong Kong search out the recognisable and well-respected brand for special occasions and events to impress.
HCC has driven much work across the supply chain to sustain and elevate Welsh Lamb’s quality reputation – but there is always room for improvement.
This project seeks to identify any eating quality variations from within the supply chain along with impacts on taste of seasonality, environment and other factors, and then aid the development of a blueprint to ensure a consistent and exemplary product that meets the tastes of consumers wherever they dine.
