A festive celebration staged at the Royal Welsh Winter Fair this year included new Christmas recipes, leaflets, posters, and recipe calendars, as well as a special demonstration with Roast Loin of Pork with Sloe Gin and Walnut Stuffing by Hybu Cig Cymru – Meat Promotion Wales (HCC) home economist, Elwen Roberts.
Visitors to the demonstration collected their Christmas pork recipe leaflets, which were a joint initiative between red meat body HCC’s Porc.Wales marketing initiative and the Menter Moch Cymru project. Also available were HCC’s 2018 recipe calendars featuring recipes for Pork, Pepper & Goats’ Cheese Lattice Tart and Pork, Black Bean and Orange Salad, which highlight the versatility and quality of the meat produced here in Wales.
HCC Market Development Officer, Kirstie Jones, who assisted in the demonstration, said: “Turkey might be the traditional Christmas meat, but pork makes a refreshing change if you’re entertaining over the festive season. This roast loin of pork combines cranberries, sloe gin and walnuts in a dish that perfectly captures the essence of Christmas.”
Menter Moch Cymru Project Manager Melanie Cargill said: “The Winter Fair was a great success in raising the profile of pork from Wales and the opportunities available through the new Menter Moch Cymru project. Elwen Roberts’ cooking demonstration was definitely one of the highlights of the show, demonstrating the quality, flavour and versatility of this succulent meat.
